While searching for a healthy coconut ice-cream recipe the other day, a recipe video on how to make flourless chocolate banana muffins popped up. It only called for a few ingredients that I already had in the kitchen so I decided to try it out.
I placed all the ingredients in my Nutribullet and blended everything until smooth. I then poured the batter into muffin tins, topped with some semi-sweet chocolate chips and some crushed walnuts, and placed it in a 350 degree oven for 15 minutes. Quick, easy and delicious. It was very moist, not too sweet, but the chocolate chips and the crushed walnuts were an added delight. Check out the recipe at getinspired.com
Here are the ingredients. I substituted the sweetener and oil.
2 eggs
2 very ripe bananas
1/4 cup maple syrup (I used honey and agave)
2 tablespoons avocado oil ( I used coconut oil)
1/4 teaspoon salt
1 cup peanut butter
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
Optional:
1/4 cup mini chocolate chips + 3 tablespoons for decorating
12 teaspoons of peanut butter for decorating

It's flourless, sugarless (except for the sugar in the peanut butter and chocolate chips) and tastes really great. Yuh can't go wrong!
