Let's Beet Together!

Waking up in the morning and having one of your best friends inveigling you to try some new healthy recipe is what I call the start of a fun day! The plan was to make Beetroot hummus with pita bread but we just ended up buying pita chips instead so it was just for us to get the rest of the ingredients. Tahini obviously is a hard thing to get at any of the major groceries right now or 'we just blind' and couldn't find it, so we finally got it at Bloom's Imports. The recipe also called for lemons but they're expensive right now and we don't trust the bottled stuff so we used limes instead.


My mother-in-law gave us a great tip on removing the shell of the channa first to give a smoother taste like how the Mediterraneans do it. We boiled the beets and blended it in a food processor then added the "shelled" channa, tahini, lime, and roasted garlic for an extra oomph. We blended some more, added the olive oil and salt and gave it a final blend to fully incorporate everything. We topped with some pine nuts, sesame seeds and parsley for garnish.


Besides looking super colorful, it tasted amazing. The earthy rich taste of the beets came out in the dish. Really great healthy snack to have at anytime of the day. You can also use it as dip for your veggies like carrots and cucumbers.
